UAS food service is looking for an experienced and passionate Cook to help support our team. The ideal candidate for this position has previous experience preparing food from grill and hot-line and assist with catering, enjoys working in a busy restaurant environment and is capable of taking direction well and multi-tasking effectively. Duties:

10Health and Safety Ensure personal compliance with Alaska Department of Environmental Safety policies through the Food Safety & Sanitization program. Ensure kitchen spaces and supplies are properly cleaned and stored. Assist with setup, operation, and cleanup of food service spaces including the grill, hotline, and grab and go options. Assist with dishwashing. Report health and safety concerns to the Manager or Assistant Manager. Provide support to student staff members and coworkers to ensure safe food handling and food storage.Essential
10Menu Planning Prepare daily and recurring specials and planned menu items fro up to 150 customers per meal. Work collaboratively with the food services team to utilize inventory by safety dates, manage backstock and leftovers. Create menu items from scratch including entrees, soups, salads, and grilled items. Ensure items are served with proper portion control and in a pleasing manner to the customer.Essential
30Customer Service and Operational Oversight Ensure that high standards of customer service are maintained in the work area, including the kitchen and sales floor. Provide guidance and feedback to student employees to ensure a high quality experience for all patrons. Assist with operation of the sales register and stocking of the sales floor as needed. In the absence of the Manager and Assistant Manager, provide operational oversight of the Lakeside Grill and Market. Provide direction to student employees and manage interactions between patrons, partners, and other food service employees. Report performance transgressions and other incidents to the on-call Manager or Assistant Manager after attempting direct intervention, as appropriate.Essential
50Food Preparation Provide low-cost, nutritionally balanced food to students, staff, and faculty and the general public. Duties include grill and hotline cooking, for walk-in sales and catered events through the Lakeside Grill and Market. Collaboratively engage in food preparation, stocking of grab and go goods, receiving and storage of inventory, and tracking of aging product. Assist with dietary accommodations for students with specific needs when practicable.Essential

Knowledge, Skills, Abilities:
  • Minimum 2 years of experience in restaurants. Health and safety regulation experience and training. Ability to cook, plan, and execute menus for large groups (up to 150 customers at mealtime).
  • Special skills and knowledge:
    • Weekly freight must be inspected, lifted, and put away. Knowledge of basic food service equipment including slicer, steam table, oven, food processors, microwaves, deep fryers, grills, griddles, toasters, coffee makers, fountain dispensers, mixers, computerized cash registers, weights and measurements, and portion control.
  • Preferred knowledge/skills/abilities:
    • Food Service knowledge. Food serviced safe handling food card. Specialty areas of cooking, ethnic, vegetarian, low carb, and baking.
Required Education or Training:
  • High School Diploma or GED
  • Two or more years' experience in the restaurant industry
  • Able to read and follow standardized recipes
  • Strong knowledge of proper food handling procedures
  • Able to work as part of a team in a busy kitchen atmosphere
  • Minimum of 2 years experience cooking for 50 people or more. Experience in grill and hot line service necessary

ServSafe Certification preferred

Salary Information:

This is a full-time, 12-month, non-exempt staff position complete with both a competitive salary and full employee benefits package. New hires will be placed on the UA staff salary schedule, Grade 75, based on education and experience.
